Dungeness crab risotto with leeks and shiitake mushrooms
Ingredients:
Crab meat of course
shiitake mushrooms
leeks
white onion
garlic
white wine
fresh tarragon
fresh red chili ( jalapenos)
fresh lemon.
wedge of fresh Parmesan
Crab wonton cups.
1/2 lb crab meat
2 tbsp mayo
1 bunch green onions
Lemon juice
Tabasco
Salt and pepper
Dungeness crab risotto with leeks and shiitake mushrooms.
- 1 lb of shelled cooked Dungeness
- 3 cups of mushroom stock
- 2 cups of short grain arborio rice
- 2 cups of water
- 1 cup of onions,chopped finely
- ½ cup of white wine
- ½ cup of parmesan cheese shredded finely
- 1 fresh chili
- 2 tbsp minced garlic
- 1 tbsp chopped tarragon leaves
- 1 tablespoon of butter
- Squeeze of a fresh lemon to taste
- Salt and pepper to taste
