Recipe – Chef Garrett Schack – Dungeness crab risotto with leeks and shiitake mushrooms

Dungeness crab risotto with leeks and shiitake mushrooms

Ingredients:

 Crab meat of course
 shiitake mushrooms
 leeks
 white onion
 garlic
 white wine
 fresh tarragon
 fresh red chili ( jalapenos)
 fresh lemon.
 wedge of fresh Parmesan

Crab wonton cups. 

1/2 lb crab meat
2 tbsp mayo
1 bunch green onions
Lemon juice
Tabasco
Salt and pepper
Dungeness crab risotto with leeks and shiitake mushrooms. 
  • 1 lb of shelled cooked Dungeness
  • 3 cups of mushroom stock
  • 2 cups of short grain arborio rice
  • 2 cups of water
  • 1 cup of onions,chopped finely
  • ½ cup of white wine
  • ½ cup of parmesan cheese shredded finely
  • 1 fresh chili
  • 2 tbsp minced garlic
  • 1 tbsp chopped tarragon leaves
  • 1 tablespoon of butter
  • Squeeze of a fresh lemon to taste
  • Salt and pepper to taste
